Warm, aromatic and comforting, this Baharat Beef & Chickpea Stew brings rich Middle Eastern flavour to your table. Tender beef is slow-cooked with chickpeas, tomatoes and our Kumari Baharat blend for a beautifully balanced, hearty dish perfect for sharing or meal prep.
Ingredients
- 700g beef chuck, cut into chunks
- 14g Kumari Baharat spice blend
- 300g brown onions, diced
- 14g garlic, minced
- 400g crushed tomatoes
- 400g chickpeas, drained and rinsed
- 300ml beef stock
- 25g olive oil
- 50g pine nuts, toasted
- 14g fresh flat-leaf parsley, chopped
- 300g basmati rice (to serve)
Directions
Brown the beef
Heat 25g olive oil in a large pot over high heat.
Brown the beef in batches until well coloured. Remove and set aside.
Soften the onions
In the same pot, cook 300g onions over medium heat for 9 minutes until soft and golden.
Add garlic and cook for 1 minute.
Bloom the spices
Add 14g Baharat spice blend and stir through the onions.
Cook for 2 minutes until fragrant.
Slow cook
Return beef to the pot. Add crushed tomatoes, chickpeas and beef stock.
Bring to a boil, then reduce to a low simmer.
Cover and cook for 75–90 minutes until beef is tender.
Serve
Cook basmati rice according to packet directions.
Ladle stew over rice and top with toasted pine nuts and fresh parsley.
Toasting pine nuts adds a rich, nutty crunch.
