Roasted Ras El Hanout Pumpkin

Ingredients
- 1 kg pumpkin (peeled & cut into wedges or cubes)
- 2 tbsp olive oil
- 1 ½ tsp Ras el Hanout
- ½ tsp sea salt
- ½ tsp black pepper
- 1 tsp honey (optional, for a caramelised glaze)
- Fresh coriander or parsley, to serve
Directions
- Preheat oven to 200°C (fan-forced).
- Place pumpkin pieces on a lined baking tray.
- In a small bowl, mix olive oil, Ras el Hanout, salt, pepper, and honey (if using).
- Drizzle the spiced oil over the pumpkin and toss to coat evenly.
- Roast for 25–30 minutes, turning halfway through, until golden and tender.
- Sprinkle with fresh herbs and a squeeze of lemon before serving
