Roasted Ras El Hanout Pumpkin

Ingredients

  • 1 kg pumpkin (peeled & cut into wedges or cubes)
  • 2 tbsp olive oil
  • 1 ½ tsp Ras el Hanout
  • ½ tsp sea salt
  • ½ tsp black pepper
  • 1 tsp honey (optional, for a caramelised glaze)
  • Fresh coriander or parsley, to serve

Directions

  1. Preheat oven to 200°C (fan-forced).
  2. Place pumpkin pieces on a lined baking tray.
  3. In a small bowl, mix olive oil, Ras el Hanout, salt, pepper, and honey (if using).
  4. Drizzle the spiced oil over the pumpkin and toss to coat evenly.
  5. Roast for 25–30 minutes, turning halfway through, until golden and tender.
  6. Sprinkle with fresh herbs and a squeeze of lemon before serving
