Pork Tenderloin Herbed with Carrots, Broccolini & Apple

Bright, fresh and full of flavour, this Mediterranean Pork Tenderloin is a simple, vibrant dish perfect for any night of the week. Juicy pork is roasted with sweet carrots, fresh broccolini and a hint of apple, then finished with lemon, feta and herbs for a beautifully balanced, light yet satisfying meal.

Ingredients

  • 700g pork tenderloin
  • 14g Taipan BBQ Mediterranean Magic seasoning
  • 40ml olive oil
  • 500g carrots, cut into batons
  • 200g broccolini
  • 1 green apple, sliced
  • 20g garlic cloves, whole
  • 60ml lemon juice + zest
  • 100g feta cheese, crumbled
  • 15g fresh parsley (to serve)

Directions

Marinate the pork

Combine Mediterranean Magic seasoning, olive oil and lemon zest to make a paste.
Rub over pork and rest for 30 minutes if time allows.


Prep the vegetables

Preheat oven to 200°C.
Toss carrots and garlic with a drizzle of olive oil and a pinch of salt in a large roasting tray.


Roast together

Place pork tenderloin on top of the carrots.
Scatter apple slices around the tray.
Roast for 25 minutes.

Remove tray, add broccolini, then return to oven for a further 10–15 minutes, until pork reaches 65°C internal temperature and vegetables are tender.


Rest the pork

Remove pork and rest for 10 minutes, loosely covered.


Finish and serve

Squeeze over lemon juice and toss vegetables gently.
Slice pork and serve over vegetables.
Top with feta and fresh parsley.
