West African Pepper Blend

A peppery dry blend for seasoning fish, meat or vegetables.  Can also be made into a paste with the addition of onion, garlic, tomatoes and capsicums. (add some dried shrimp and a little oil for extra oomp!)

Ingredients

  • 2tbs Black peppercorns
  • 2tbs White peppercorns
  • 1tbs allspice berries
  • 2tsp grains of paradise (if unable to source -try equal parts of ground black pepper, ground cardamom, and ground ginger)
  • 2tsp ground ginger
  • 1tbs chilli crushed flakes

Directions

  1. Grind the whole spices and combine with the ginger and chilli flakes.
  2. Store in an airtight container or plastic bag in the freezer for 2-3 months.
