West African Pepper Blend
A peppery dry blend for seasoning fish, meat or vegetables. Can also be made into a paste with the addition of onion, garlic, tomatoes and capsicums. (add some dried shrimp and a little oil for extra oomp!)
- 2tbs Black peppercorns
- 2tbs White peppercorns
- 1tbs allspice berries
- 2tsp grains of paradise (if unable to source -try equal parts of ground black pepper, ground cardamom, and ground ginger)
- 2tsp ground ginger
- 1tbs chilli crushed flakes
- Grind the whole spices and combine with the ginger and chilli flakes.
- Store in an airtight container or plastic bag in the freezer for 2-3 months.
